Darrell Joseph Knighton “Joe” was born April 27th, 1957 to parents Floyd Kaye Knighton and LuAnn Stark. He was the fifth of eight children and was raised in Bountiful, Utah. He was a convert to The Church of Jesus Christ of Latter Day Saints. He married Aileen McCreary in 1978 in the Salt Lake LDS temple. They were married for 18 years and had eight wonderful children: Lindsay (Neil) Anderson, Cameron (Leah) Knighton, Jonathon Knighton, Brandon (Brittany) Knighton, Benjamin Knighton, Emily (Jeffrey) Knight, Christian (Kiersten) Knighton, and Abby Knighton. Joe was very proud of his children and 17 grandchildren.
Joe fulfilled his dream of owning a restaurant when he opened The Pizza Company and Little Mexico in Kaysville, Utah. He was also proud to work as an EMT in Davis county. Joe was a handy man. He had a great love for the outdoors; camping and fishing. He enjoyed riding his motorcycle, playing racquetball, painting, and building and flying remote control airplanes.
Joe was loved by many and a friend to all. He noticed and cared for those who were less fortunate. For several years he served as a temple worker in the Ogden LDS temple.
Joe is survived by his parents, children, grandchildren, and siblings: Kenny (Shirley) Knighton, Kathy (Doug) Gardner, Ryan (Shawna) Knighton, Bryan (Darla) Knighton, Donny Knighton, and Karl Knighton. He is also survived by his faithful dog Lily. He was preceded in death by his sister Laura (Rod) Frazier. His family takes comfort in knowing he is at peace.
Funeral services will be held on Thursday, August 30th at 11:00 am, at the Bountiful 2nd Ward, 650 S. 200 E. Bountiful. A viewing will be held at Wednesday evening from 6:00 – 8:00 pm at Russon Mortuary, 295 North Main, and Thursday morning 9:45-10:45 am at the church prior to services. Interment at the Bountiful City Cemetery.
