Elizabeth Mitchell Dodson

April 18, 1977 — July 5, 2019

Elizabeth Mitchell Dodson passed away Friday, July 5, 2019 after a valiant fight with cancer.  Born April 18, 1977 in Seoul Korea, she was adopted at the age of 7 months by Thomas and Dixie Mitchell.  She was always full of spunk and could find fun in everything.  She graduated from the Western Culinary Institute in Portland, Oregon, and used the skills she learned there to fill her family full of delicious food and amazing baked goods.

She especially loved the outdoors and spent many hours hiking, camping and fishing.  One of her favorite things to do was drive the Mirror Lake Highway. 

In 2010 she met the love of her life, Kurt Dodson.  Kurt said that after their second date he knew he wanted to marry her; they were married April 1, 2011.  They had a wonderful marriage, and though it took some time to find each other, they found joy every minute they spent together.  They moved to Texas where they bought a farm and spent 8 wonderful years enjoying the farm life, raising cows, pigs, chickens, and honeybees.  She loved everything about farm life and found true joy and happiness every day she spent with Kurt on the farm. 

Anyone who came to their home was warmly welcomed and treated to delicious food and fun.  While she never had children of her own, she was a great step-mom to Kurt’s son Corey and daughter Katy and grandma to Katy’s two boys.  They also opened their home to two exchange students, Julia from Brazil and Hyewon from Korea.  Both girls loved farm life, not wanting to leave to go back to their homes. 

Gone too soon, she and Kurt were making plans to travel across America in their trailer and enjoy the great outdoors.  She is survived by her loving husband Kurt, her dad Tom Mitchell (Donni), mom Dixie Mitchell, sister Jenni Francis (Ryan), Corey Dodson, Katy Dodson and her two sons Theodore and Archer, grandmother Carol Stoker and her many aunts, uncles and cousins. 

Funeral services will be held 11:00 am, Saturday, July 13, 2019 at the Woods Cross 13th Ward building, 1509 W 1500 S, Woods Cross, with a viewing from 9:30 – 10:30 am prior to services.
