Jennifer Schenk Galloway, age 44 of North Salt Lake passed away peacefully at home surrounded by her family on Tuesday, September 24, 2024, following a short but valiant fight with cancer.
Jennifer was born December 10, 1979, in Idaho Falls, Idaho to Larry Dee Schenk and Juliann Sophia Empey Schenk. She graduated from Hillcrest High School in 1998. She attended Utah State University where she met her best friend, Jacob Galloway. They were very different, but they became instant friends, and she fell in love and married him anyway. They were sealed for Time and All Eternity in the Idaho Falls Temple on March 15, 2001. While working on her degree in Math Education, she had her first two daughters, Julie and Kaytlin. Being a new mom was difficult, but she continued her schooling and received her bachelor’s degree in 2004.
Her life included many adventures. In 2006, Jennifer and Jacob moved their small family to Belgium for Jacob’s work. While they were there, they served together in the Kortrijk Belgium Branch of the Church of Jesus Christ of Latter-day Saints. Although they never served a traditional mission together, they consider their service in this branch as their mission. Their best souvenir was their son Jonathan, who was born while they were there. After three years in Belgium, they moved to North Salt Lake Utah, where their fourth child Kirstin was born.
Service has always been an integral part of Jennifer’s life. Jennifer has served as a math tutor, substitute teacher, window cleaner, Relief Society President, Young Women President, camp leader, Trek mom, family history researcher, soccer mom, band mom and weed puller extraordinaire to name a few.
Jennifer truly loved life and being with family and friends. She enjoyed camping, hiking, kayaking, water aerobics, gardening, canning, listening to country music, Minions and sunflowers. She was a joy to be around, a friend to all who met her, a hard worker, a fierce defender, a dedicated math teacher, a phenomenal mom, a loving grandma and a faithful Daughter of God. During her most difficult days, she cared more about other’s feelings than how she was doing herself. Her most amazing gift was that she always shared her love for everyone.
She is survived in life by her husband Jacob, her children, Julie (Zach) Eggett, Kaytlin, Jonathan, and Kirstin; grandson “The Most Loved” Winston; Parents Larry and Juliann Schenk and Jeffery and Lola Galloway; siblings, Jason(Allison) Schenk, Jeff (Pam) Schenk, Jill (Mark) Erickson, Justin (Misty) Schenk, and brothers-in-laws Nathan (Anneris) Galloway, Matt (Julie) Galloway, Luke Galloway, Sam Galloway, and Alex (Kate) Galloway; and well-loved nieces, nephews, cousins, students, neighbors, and loved ones everywhere.
Funeral Services will be held at 11:00 a.m. Friday, October 4, 2024, at the North Salt Lake Legacy Stake Center, 954 West 1100 North, North Salt Lake, Utah. There will be a public viewing Thursday, October 3, 2024 from 6:00-8:00 p.m. at Russon Mortuary, 295 North Main, Bountiful, Utah. There will also be a viewing from 9:30-10:30 a.m. on October 4, 2024, at the North Salt Lake Legacy Stake Center.
Private graveside services will be held at Lakeview Memorial Cemetery, 1640 Lakeview Dr., Bountiful.
Services will be streamed live on the Russon Mortuary Live Facebook page and on this obituary page. The live stream will begin about 10-15 minutes prior to the service and will be posted below.
